Now that I have cucumbers I want some good recipes.
So far I’ve made a creamy cucumber salad with dill (from my garden). I remember a great vinegar cucumber salad my granny used to make. I’ll have to get that recipe from my mom because every recipe I find has sour cream in it. While that’s ok, I want something without sour cream.
I found this one, below, today. Basically take all of the following ingredients, mix them together and chill for about an hour before serving. Everything should be in your garden or local farm market so it’s easy to make. Serve with tortilla chips (I like the Garden of Eatin’ blue corn chips).
2 medium cucumbers – peeled, seeded, and chopped
2 medium tomatoes, chopped
1/2 cup chopped green bell pepper
1 jalapeno pepper, seeded and minced
1 small onion, chopped
1 clove garlic, minced
2 tablespoons lime juice
1 teaspoon minced fresh parsley
2 teaspoons minced fresh cilantro
1/2 teaspoon dried dill weed
1/2 teaspoon salt
1 (12 ounce) package tortilla chips

  1. Do not often have time to read and comment, but since I am up so early I caught up on my reading. I like the humorous slant to the posts…of course the “battle of the bugs” is a little too close to home! 🙂
